  13. 1 (9 inch) double crust pie shell

Instructions to make My Tourtiere

  1. Boil potato. When finished reserve 1/2 cup of the water potatoes were boiled in. Drain and mash the potato. Leave in the pot for now.
  2. In a pot or skillet large enough to accommodate, simmer the meats, onion and garlic on low for about 1 hour, stirring occasionally. Drain off any fat Add the seasonings and the potato water. Cook another 1/2 hr on low. Add your reserved mashed potatoes to meat mixture and combine well. Remove from heat. Cool completely.
  3. Fill the pie plate with the cooled meat mixture. Cover with the top part of pastry and seal the edges. Make an egg wash and brush on the pastry
  4. If baking right away, brush with egg wash, and bake in preheated 400F oven for 30 - 40 minutes until crust is golden. Serve warm. If cooking from frozen, brush with egg wash and bake in preheated 400F oven for 50-60 minutes or until golden.
